What is the main component of gelatin?

The main component of gelatin is protein, and gelatin is also called animal glue. It is made from animal skins, bones, and leather industry waste. The common gelatin on the market is mostly made from cowhide, cow bones, or pig skin. Gelatin is a macromolecular hydrophilic colloid, which is the product of partial hydrolysis of collagen. Depending on the purpose, the quality requirements for gelatin are also different. When used as a binder, the main requirement is bonding strength. When used in photography, food and other fields, the purity of the product is emphasized.

 

Classification of gelatin:

1. According to the production method, gelatin is divided into alkaline gelatin (also known as type B gelatin), acid gelatin (also known as type A gelatin), and enzyme gelatin. The biggest difference between the three types of gelatin is that different methods are used in the pretreatment process of gelatin production. The output of type B gelatin ranks first among the three types of gelatin. The raw materials are pretreated in an alkaline medium and extracted in a neutral medium after neutralization. Type A gelatin refers to gelatin obtained by pretreating the raw materials in an acidic medium and extracting them in an acidic medium. Enzymatic gelatin refers to gelatin extracted from raw materials pretreated with enzymes in a medium with a moderate pH value.

 

2. Gelatin can be divided into edible gelatin, medicinal gelatin, photographic gelatin, and industrial gelatin according to its use.

 

3. According to different qualities, it can be divided into high-grade gelatin, low-grade gelatin, and bone glue. Among them, high-grade gelatin is referred to as gelatin, which is called Gelatin abroad, and low-grade gelatin and bone glue.
